Spaghetti Squash Casserole





Spaghetti Squash is delish. Especially if roasted in the oven. It's amazing what happens to veggies when you roast them. They become sweet. 

Spaghetti Squash
Cut the Squash in half lengthwise
Cut off the Stem
Clean out the guts & Seeds
Sprinkle with Sea Salt & Fresh Ground Pepper
Drizzle with Extra Virgin Organic Olive Oil

Turn face down in a 9X13 Baking Dish
Bake in a 350 degree oven for 1 hour
Take out of oven, Cool, and scrape contents out with a fork or spoon. 

This is great to eat by itself. But, lets liven it up a bit....

Casserole
In a nonstick skillet on the stove add (Use whatever amounts you want :):
Spaghetti Squash
Grape Tomatoes
Carrots
1 Can Kidney beans (drained)
Broccoli
Kale
Spinach
Diced Garlic
Ground Black Pepper
Sea Salt to Taste
Mrs. Dash Garlic & Herb
Cook for about 15 minutes
Serve with Pickled Beets & Sauerkraut
And, everything tastes better with Cholula Hot Sauce (My Favorite at the moment is Chili Lime)
