Spectacular Vegan Pancakes

I found this recipe online from thrivingonplants

In the Vitamix add: 

1 C. Rolled oats. Blend into flour.

Add: 1 C. nut milk (I used almond/coconut milk unsweetened)

1 ripe banana

1 Tbsp. coconut sugar, maple syrup, honey, or any natural sweetener

1/2 tsp. cinnamon

1/2 tsp. vanilla 

Blend until smooth. 

Let sit for 5 minutes. 

Cook on a greased skillet (I used coconut oil) until brown on both sides.

Top with my Vegan black bean chocolate mousse & and berries.

I shared this with my love.


Vegan Mac & Cheese

This was pretty good, but I think instead of Sweet Potato, next time I will use Russet Potatoes.

In a pot add:
1 Large Sweet Potato (or 3 medium sized russet potatoes), chopped
3 Carrots, chopped
1 small onion, chopped
Boil until tender.
Place into a blender (I used my Vitamix).

Add into the blender with the Veggies:
1 Tbsp. Minced Garlic
1 tsp. Sea Salt
1 Tbsp. Lemon Juice
1/2 C. Nutritional Yeast
And any other spices you would like. 
Serve over your favorite Noodles.

Black Bean Chocolate Mousse

This is awesome! We have already made this daily since I created this recipe. Yummy! Everyone in my family loves it!

Oh my heck! This is amazing! Our new Fave. Seriously! Try it. I came across a recipe from rawblend on YouTube where they used white beans in their pudding. We were all out of white beans so I decided to use black beans. This is amazing! Oh wait. I already said that. Haha.

In a Vitamix add:

1 (15 oz) can Black beans drained & rinsed well
1 C. Unsweetened silk coconut milk
1/2 C. Coconut oil
1/2 C. Cacao powder or carob
1/3 C. Pure Maple syrup or honey
1 tsp. Vanilla extract

Blend until smooth. It will be liquid. Magic happens when chilled!!
Place in the freezer for 1 hour. 
Store in the fridge.

Blueberry Divine Smoothie

In a blender add:

Beet greens

Seeded grapes (or normal grapes)




Frozen blueberries

Almond/coconut silk milk

Blend until smooth.

Zucchini Pesto Bites

Okay, let's just admit it, these don't look that appetizing. But, they are so good. Definitely a great way to use Zucchini. 

Zucchini coins cooked at 450 degrees for 10 min on a silpat lined baking tray. 
Top with Vegan pesto
Bake another 10-15 minutes
Top with Orange bell pepper & parsley


My house smells like pepperoni pizza. ;)

Spinach Basil Pesto

I love Pesto! It is packed with flavor and so delectable!

5 Star Pesto Recipe:
3 C. Fresh Basil
1/2 C. Spinach
1/2 C. Vegan Parmesan
1 Tbsp. Minced Garlic
4 Tbsp. Extra Virgin Olive oil
1/2 C. Walnuts
1 Tbsp. Lemon juice

Mix well in a food processor or high speed blender. Use the wand.

Serve on Wasa crackers with Tomatoes, and freshly ground pepper. 

Serve with Sugar Snap Peas.

Rainy Day Chocolate Boost Smoothie

I love this! 

In a blender add:

1 scoop Vega One Chocolate Nutritional Shake powder
2 Bananas
1 C. Unsweetened Silk Coconut Milk
1 Tbsp. Almond Butter
1 tsp. Cinnamon

Blend until smooth. 
Topped with: pumpkin seeds, goji berries, and cayenne pepper.

This tastes similar to a chocolate covered cinnamon bear. With the chocolate, cinnamon, and cayenne mix.

This recipe was inspired by @juicejunkiestxin Fort Worth. They're good vibrations.

Banana Oat Bars

Are you looking for a super healthy and clean Oat Bar recipe? This one is a good one. I got it from my Eat to Live Cookbook from Dr. Joel Fuhrman.


2 C. Oats
1/2 C. Unsweetened shredded Coconut
1/2 C. Chopped dates or raisins (this might be better if you make the dates or raisins into a paste by blending them in a bit of water in the blender).
1/4 C. Chopped walnuts
2 large ripe bananas, mashed
3/4 C. Apple, chopped
2 Tbsp. Ground Flax Seeds

Mix well. Press into a greased 9x9 baking dish. Bake at 350 degrees.
Cool. Cut into squares.

I served mine with freshly squeezed grapefruit juice.


Cauliflower Chocolate Pudding

The other day on YouTube I saw this on the channel Feastingonfruit. I just had to try it. I was pleasantly surprised. My family couldn't guess the secret ingredient. I told them after they had finished it. Sometimes when I tell them the "secret" ingredient before, they don't eat it. :)


In a high speed blender add:
4 C. Steamed Cauliflower
1 C. Non-dairy Milk (I used Silk unsweetened Coconut Milk)
12-15 pitted & soaked dates
1 tsp. Vanilla extract
1/2 C. Cacao powder
2 Tbsp. Local Raw Honey or Maple syrup.

Blend. Top with Strawberries.

Go Bananas!

We really like NiceCream (banana ice cream) and to add bananas to our smoothies, especially when they are frozen. 

You'd think we had a bunch of monkeys living here, as much bananas as we go through. Haha

I like to buy my bananas in bulk. My local produce guy let me buy two boxes of ripe bananas for $14 together! Wahoo! It helps to get to know your produce guy. They actually like it when you buy their ripe produce. Not everyone likes bananas this ripe, the riper the bananas the sweeter and more digestible they become. 

My advice to you would in bulk and freeze. 


Orange Cream Almond Butter

Brunch for 2:

Homemade Orange Cream Almond Butter:
1.5 C. Almonds
1 tsp. Simply Organic Orange Flavor (organic Sunflower oil & Organic Orange Oil)
1 Tbsp. Raw Local Honey or Pure Maple syrup
1-2 Tbsp water

Blended in the Vitamix with the wand.

Store in the fridge. 

Dip Apples & Pears in the Almond Butter. 

This is really good! I will definitely make this again!
