This was pretty good, but I think instead of Sweet Potato, next time I will use Russet Potatoes.
In a pot add:
1 Large Sweet Potato (or 3 medium sized russet potatoes), chopped
3 Carrots, chopped
1 small onion, chopped
Boil until tender.
Place into a blender (I used my Vitamix).
Add into the blender with the Veggies:
1 Tbsp. Minced Garlic
1 tsp. Sea Salt
1 Tbsp. Lemon Juice
1/2 C. Nutritional Yeast
And any other spices you would like.
Serve over your favorite Noodles.
I got this recipe idea from Thrivingonplants on Youtube.
The other day on YouTube I saw this on the channel Feastingonfruit. I just had to try it. I was pleasantly surprised. My family couldn't guess the secret ingredient. I told them after they had finished it. Sometimes when I tell them the "secret" ingredient before, they don't eat it. :)
