Carrot Cake Bliss Balls



After making carrot juice this morning I wanted a way to use the pulp. This is what I came up with.

Recipe:
*1 C. Carrot pulp/shredded carrots
*3 large dried apricots
*1/2 C. Unsweetened coconut flakes
*10 pitted soft dates
*3/4 C. Walnuts
*1 scoop Vanilla Protein Powder (I prefer Plantfusion)
1 tsp. Vanilla extract
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1/4 tsp. Cloves
(If you want it sweeter you can add 1 tablespoon raw honey or pure maple syrup)
Blend or high speed blender (use wand) in the food processor until smooth.

Roll in coconut flakes. Enjoy!
