Strawberry Lemonade






This week Lemons were on sale for 3 for $1 and they were huge! So, I bought 15. What do you do when life gives you lemons? Make lemonade of course! 
My family loved this recipe. It is sweet, yet satisfyingly tart.

Ingredients:
2 C. Frozen strawberries
1 C. fresh squeezed Lemon Juice (you can buy a citrus juicer just about anywhere)
1/4 C. Maple Syrup
4-5 C. water

Blend in the blender (I used my Vitamix).

Enjoy!

Hummus



 I am always looking for healthy snack options. I love Hummus with Veggies. It is packed with goodness, satisfying, and filling.

Ingredients:
1 Can Garbanzo Beans, drained
1/4 C. Fresh squeezed Lemon Juice
1/4 C. Tahini
1 tsp. diced Garlic
2 Tbsp. Coconut oil
1/2 tsp. salt
1/2 tsp. Ground Cumin
2 Tbsp. water

Blend in the blender (I used my Vitamix). Top with Paprika or chili powder.

Serve with your favorite Veggies.

I also love to use Hummus in place of Mayo or to spread on Wasa Crackers. Yummy!

I got this recipe idea from Inspiredtaste, but tweaked it to make it my own. :)

Candy Cane Green Smoothie



This recipe was so good, I actually made it twice in one day and that's not normal for me.

Ingredients:
2 C. Almond Milk
2 Frozen Bananas
6 Mint Leaves (I either use ones I have dried or frozen)
1 Scoop Vanilla Raw Meal (By Garden of Life) or Vanilla Protein Powder
1 C. Spinach

Blend in a blender (I used my Vitamix). Enjoy!

Serve in a Fancy Cup and top with Candy Canes if desired.

This is Vegan, Dairy, and Gluten Free.

Red Velvet Nice Cream



I love Red Velvet Cake. So does my Grandma. So, I think my love for Red Velvet Cake is Nostalgic. But, lets fast forward from when I use to eat whatever I wanted when I wanted it.  Now, when I eat Cake I feel really happy and then lousy.

I wanted to recreate something that tasted like Red Velvet Cake, but was healthy. So, here we go.

Ingredients:
3 Frozen Bananas
1/2 Frozen Beet
1 C. Frozen Strawberries
1 Scoop Chocolate Raw Mseal (or other Chocolate Protein Powder)
1 Tbsp. Cacao Powder
1 tsp. Vanilla
1/2 C. Almond Milk

Blend in a High Speed Blender (I used the Vitamix). Use the wand and blend until smooth.

Top with Chocolate Sauce:

1 Tbsp. of each:
Raw Honey
Coconut Butter 
Peanut Butter
Cacao Powder
Coconut Oil

Warm over the stove or in the microwave.

Top with Unsweetened Coconut Flakes.

This is delicious and Nutritious!
