Spectacular Vegan Pancakes

I found this recipe online from thrivingonplants

In the Vitamix add: 

1 C. Rolled oats. Blend into flour.

Add: 1 C. nut milk (I used almond/coconut milk unsweetened)

1 ripe banana

1 Tbsp. coconut sugar, maple syrup, honey, or any natural sweetener

1/2 tsp. cinnamon

1/2 tsp. vanilla 

Blend until smooth. 

Let sit for 5 minutes. 

Cook on a greased skillet (I used coconut oil) until brown on both sides.

Top with my Vegan black bean chocolate mousse & and berries.
