Vegetable Coconut Curry


I have been listening to JJ Virgin a lot on YouTube recently and she uses Coconut Milk a lot. It gave me the idea of Coconut Curry that I love to make. 

In a Cast Iron Skillet on the stove add:
1 small onion, chopped
1 sweet potato, peeled & chopped
1 C. cabbage, chopped
2 inches of ginger, peeled & chopped 
1 C. baby carrots
1 C. broccoli, chopped
1 Tbsp. garlic, minced
Cook for 10 minutes.

Then Add:
10 sugar snap peas
2 cans coconut milk
1 can water
1/4 C. fresh basil, chopped
1 Tbsp. curry powder
1 tsp. sea salt
1 Tbsp. Apple Cider Vinegar
1/2 tsp. black pepper, freshly ground
1/4 tsp. red pepper flakes, optional

Simmer for 10-15 more minutes.

Serve over your favorite Rice. We usually prefer Brown Rice (for it's nutrients), but we were in a hurry last night to get dinner on the table. So we made Jasmine Rice in the Rice Cooker.

Top with more fresh Basil.
