I try to listen to my body when choosing something to eat. This is what I felt like eating. :) It was really good!
Gather some Small Red Idaho Potatoes from the pantry. :)
Chop potatoes into bite-sized pieces.
Boil in water until done.
Drain.
Add red onion, minced garlic, chopped fresh parsley, sea salt, and freshly ground black pepper.
Cook for 5-7 minutes.
Top with vegan Parmesan cheese and Cholula hot sauce.
Peeled and sliced grapefruit topped with coconut sugar and served with pitted dates.
