Yummy Energy Bars


These are really good, and they last for up to 3-5 days in the fridge. 

In the Food Processor add:
2 C. Nuts (I used Almonds, Pecans, and Walnuts)
2 Tbsp. Sunflower Seeds
1 C. unsweetened Coconut
2 C. pitted dates
2 Tbsp. Coconut Oil
2 Tbsp. Pure Maple Syrup
Dash of Salt
1 tsp. Pure Vanilla Extract

Process until well blended and gets desired consistency. Line a 8X8 baking dish with parchment paper. Press mixture down into dish evenly. Chill in the fridge for an hour. Cut into bars (& wrap individually to take on the go), or roll into bites.
