Bananas Foster with Whipped "Cream"


Lately when I buy bananas I buy them by the box ($20). Today they are ripe. We have been eating them, drying them, freezing them (which is my favorite way to have bananas) and cooking with them.

Bananas Foster:
In a non-stick pot on the stove add:
1 Tbsp. Coconut Oil
1/4 C. Coconut Sugar
Cook for 10 minutes on Medium/Low heat until the consistency gets thicker.
Add:
1 tsp. Vanilla Extract
1 tsp. Cinnamon 
Stir. 
Add:
Approximately 5 bananas cut in half and then in half lengthwise.

Cook for another 5-10 minutes. Place into a bowl. Top with whipped "Cream"

Whipped "Cream":
Place a full fat can of Coconut milk in the freezer for 1 hour or the fridge for 3-5 hours.
Open and scrape the top cream off into a bowl.
Beat with beaters until whipped cream consistency. 
Add:
1 tsp. pure Vanilla Extract
1 Tbsp. Coconut Sugar
