Cauliflower Rice


This was scrumdittlyumptious! I will definitely make it again. Plus it was so easy to make, so much quicker than normal rice. The taste and consistency reminds me so much of couscous. 

Recipe:
In a food processor add:
1 head of cauliflower (stems removed)
Process until it looks like rice, but is not mushy.

Pour Cauliflower into a skillet with:
1 Tbsp. Coconut Oil
2 Green onions, chopped
1 handful of Parsley, chopped
1 Tbsp. Garlic, minced
1/2 tsp. salt
1/4 C. Carrot matchstix
1 small (red, orange, & yellow) peppers, chopped
1/2 tsp. Italian Seasoning
A dash of Freshly Ground Black Pepper

Cook for 10-15 minutes on Medium heat.
Top with Parsley.

Enjoy warm or cold.

P.S. This dish would go well with Cholula Hot Sauce :)
