Roasted Butternut Squash


This was such a great idea I got from Fablunch on Youtube. While you are roasting your butternut squash, you can also roast your garlic at the same time. Plus the flavors all mix together. It's amazing!

Recipe:
Cut a butternut squash in half and cut the stem off.
Clean out the "guts".
Place squash into a 9X13 baking dish 
Cut off the top of the garlic bulb & place inside the squash indentation
Sprinkle with a bit of Olive Oil, Italian Seasoning, Sea Salt, & Garlic Powder
Bake face side up at 350 for 1 hour
Scoop out with a spoon.

You can eat it plain, Place it in the blender and serve it as a side dish, or add the Puree to a soup (that's what I did).
